Really, this has got to be the easiest soup ever! Finding so many cooking blogs has inspired me to try new recipes and new greens. Lentils can be the easiest to cook, but if you’re like me, you have probably tried cooking with them once or twice (more like once!) and then never again. Well, I am taking advantage that Francis loves soups, and as it turns out, soups are some of the easies dishes one can make 🙂
I made a very simple version here. I only added some kale and carrots. Sautéed the onions, garlic tomatoes and of course, serrano chile (the mexican in me..ha!) added everything onto the water while the lentils were half way cooked. After about 10minutes I added the carrots and lastly, the kale.

Yummy! That serrano chile added just the right amount of spice 😉
